As scale projects go, I once thought that a Mercury Redstone had to be one of the simplest options. That was before I became intimate with Launch Escape System Towers. Those can take a level 1 or 2 rocket and quickly turn it into a level 5 operation. It does look nice when its finished though.
The only Mercury Redstone I have built is the one from Sheri's Hot Rockets. (I have built and rebuilt other LES towers though) It was a unique experience and used lots of methods with which I was unfamiliar. It seemed to have taken forever to build and even longer to overhaul but I think its worth it.
The original build lost its styrene LES on the maiden flight and has since made one flight without it. I am working on a tower rebuild and even hope to have it done in a year starting with the number "2".
